Our Story

Authentic Italian Cuisine in Key West

ONLYWOOD was born from a simple belief: great food starts with fire, patience, and respect for tradition. Inspired by the small Trattorias of Italy, ONLYWOOD PIZZERIA TRATTORIA brought authentic wood-fire Napolitan pizza to the heart of Key West. At the center of the restaurant is its soul – a traditional Italian wood-burning oven, built with lava material from Mount Vesuvius and reaching 1000 degrees to transform the well-rested dough into a perfectly crispy, airy Napolitan-style pizza in just moments. Pastas are homemade, and what is not produced in-house is imported directly from Italy.

Expanding the Flame

The founders, Davide and Alessandro, expanded their vision in 2019 by opening ONLYWOOD GRILL.

Inspired by the Mediterranean way of eating – where fire isn’t just a cooking tool but a way of connecting people – ONLYWOOD GRILL opened its doors on Caroline St with the goal of creating a place that feels like home, a place to celebrate.

At the heart is the flame once again. It transforms fresh ingredients – from perfectly seasoned steaks to tender seafood and vibrant vegetables – into dishes that carry depth, character, and a hint of smoke that feels like summer all year. Wood-fire pizzas and wood-fire grill classics sit side by side on a menu rooted in Italian tradition but influenced by global tastes.

A New Expression: S.M. ONLYWOOD

Finally, in December 2025, at the southernmost spot of the USA and inside the Santa Maria Hotel, S.M. ONLYWOOD was opened. S.M. ONLYWOOD carries the same fire and tradition that define the Onlywood name – but with its own distinct expression. Rooted in Italian heritage, S.M. ONLYWOOD embraces Roman-style pizza: light, crisp, and thoughtfully crafted in a special temperature-controlled imported oven. Different in shape and with a thicker crust, it highlights its toppings rather than overpowering them – a nod to the everyday pizzerias of Rome.

Where Italy Meets the Keys

The menu reflects its island home. Fresh, locally sourced fish takes center stage, prepared with Italian restraint and respect for the ingredients themselves. Each dish allows the natural flavors of the sea to shine, enhanced by olive oil, herbs, and the subtle kiss of fire.

At the heart of S.M. ONLYWOOD remains a wood-fire grill – a constant across the Onlywood family. The flame brings depth and warmth to both land and sea, tying Roman tradition and coastal living together in one kitchen.
